After the tea leaves have been picked the smaller leaves are separated by sieving.

The larger whole tea leaves are used differently. Loose tea can be dosed individually and is particularly suited to special or ceremonial occasions. Tea is weighed according to individual preference, brewed in one teapot, then poured into another for serving. Tea tasters recommend using 1.5 to 2 grammes of tea per cup. For those who enjoy experimenting with different types of tea it is important to remember that the smaller the leaf the more tea yielded. Brewing time depends on the desired effect. Tea brewed for up to three minutes has a stimulating effect whilst tea brewed for five minutes has a calming effect.
